High-protein Sandwich Spread

Carleton Martello Tower, originally built to protect Saint John during the War of 1812, was used as a fire command post in World War Two. The men stationed at the tower, seen above enjoying their lunch on the roof, kept an eye on the busy port and were trained to coordinate fire from four coastal batteries in the event of an enemy attack.

Sandwiches have always been a quick and easy means of satisfying our hunger. During times of ration or shortage, fillings were simple and nutritious. 1940s-era recipe collections include many simple ideas for sandwich filling suggestions like peanuts, eggs, leftover meat or fish, cheese and even beans. Believe it or not, sometimes several of these unlikely companion ingredients were in the same sandwich!

High-protein Sandwich Spread

Ingredients:

  • 2 oz | 60 g soft butter
  • 2 oz | 60 g peanut butter
  • 3 or 4 hard-boiled eggs

Directions:

  • Mash eggs well. Add butter and peanut butter. Mix well. Serve on plain or toasted bread.
